This is a really good cold summer dinner that can be made early in the day...It would also make a very nice luncheon meal.

Balsamic Chicken Salad
3 cups diced cold, cooked chicken
1 cup diced apple, unpeeled
Seedless grapes, amount optional
1/2 cup diced celery
2 green onions, chopped
1/2 cup chopped walnuts
3 tablespoons balsamic vinegar
5 tablespoons olive oil
Salt and pepper to taste
Toss chicken, apple, seedless grapes, celery, onion and walnuts together in a large bowl.
Whisk together balsamic vinegar and oil and pour over the salad. Season with salt and pepper to taste and mix well. Allow to rest about 30 minutes before serving.
Note: Use a good, sweet balsamic vinegar. You can add your favorite ingredients to this basic salad or substitute other kinds of nuts or fruit.
