Enjoy..........got this from a client and have "sampled" it/also made it a number of times....it is from a "Great Canadian Pie" contest & was a winner.
A Lady from the NWT won with this recipe!
    Caramel Apple Pie....
1 Robin Hood Frozen Pie Crust OR make your fav!
(Guessing here that it would be a 9-inch pie)

    2/3 cups granulated white sugar
    2 tablespoons All-purpose flour
    3/4 teaspoon cinnamon
    1/2 cup whipping cream
6 cups peeled, sliced "fav. pie" apple
2-52 gram soft caramel filled chocolate bar, like caramilk

    1 tablespoon brown sugar

    1 tablespoon milk OR cream
    1 additional tablespoon white sugar
Thaw pastry at room temp for about 30 minutes.
    Pre-heat oven to 450'F.
Combine 2/3 cup sugar, flour, cinnamon & whipping cream in a large bowl. Add Apples, mix gently.
Place half the mixture on bottom crust.
Break the chocolate bar into squares & place "evenly" over the apple mixture.
Moisten the edge of the nbottojm crust.
Place the top pastry over the filling.
Seal & "flute" edge.(If using a solid top crust, cut slits in the top crust)
Brush crust lightly with milk OR cream, sprinkleit evenly with 1 tablespoon of the white sugar.
Place pie on a piece of aluminum foil on a baking sheet.
Bake on lower rack at 450'F for "about" 10 minutes.
Reduce heat to 375'F and bake another 35-40 minutes, OR longer until fruit is tender and crust IS golden.
([size=12]NOTE:...IF the pastry edge starts to brown too quickly, cover edge with strips of aluminum foil.)

Enjoy! It IS a wonderful pie!
