Creamy Cheddar and Cauliflower Hummus
This smooth hummus is packed full of smoky cheddar cheese and roasted cauliflower for a healthy dip with plenty of protein and fiber! Serve it with chips, vegetables, or pita bread.

Ingredients
1 (15 oz.) can chickpeas, rinsed and drained (reserve liquid)
1 C. roasted cauliflower
1 C. sharp cheddar cheese, shredded
3/4 tsp. smoked paprika
1/4 tsp. cumin
1 Tbs. oil
1-2 Tbs. reserved chickpea liquid, if needed
salt and pepper, to taste
Directions
Combine all the ingredients except the the salt, pepper, and reserved bean liquid in a blender or food processor. Blend until smooth, adding the reserved bean liquid if needed, or more oil. Season with salt and pepper to taste.
