Carrots Elegante
Coarsely shred 1-pound (about 10 medium size) scraped carrots
into a buttered 6-cup baking dish. Mix in 1-tablespoon sugar,
1-teaspoon salt, and 1/4-teaspoon pepper; dot with 4-tablespoons
(1/2 stick) butter or margarine; cover.
Bake in moderate oven (350 degrees) for 1 hour, or until tender.
Makes 4 to 6 servings.
