    Mustard Pork Chops

    4 pork chops, 1" thick
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    2 TB extra virgin olive oil (EVOO)
    1/4 cup white wine
    3 cloves garlic, minced
    ± 1/2 cup chicken broth
    1 TB butter or stick margarine
    1 TB lemon juice
    1 TB Dijon mustard
    1 TB capers
    1/4 tsp. Worcestershire sauce

    1. Sprinkle chops with salt and pepper. Heat a large skillet over medium-high heat for 2 minutes.
    Add olive oil. Heat until hot. Add chops. Turn heat to high. Cook chops, turning several times,
    until browned, about 4 minutes. Reduce heat to medium. Add wine and garlic. Cook, turning chops
    twice, until wine is evaporated, about 5 minutes.

    2. Add 1/2 cup broth and turn heat to low. Cover and cook, turning the chops once, until meat is
    tender, about 10 minutes. Transfer chops to serving platter.

    3. Reduce sauce in pan over medium heat to about 1/3 cup (or add more broth to make 1/3 cup).
    Add butter, lemon juice, mustard, capers and Worcestershire sauce. Stir to mix well. Pour sauce
    over pork and serve.

    Serves: 4.
