Pork Chops in Dill Cream
1 pkg. pork chops
salt and white pepper
1 TBSP each of butter and vegetable oil
1/2 cup finely chopped onion (may use green onion)
3/4 cup chicken broth
2 TBSP lemon juice
1 tsp. dijon-style mustard
2 tsp. dried dill weed
1/2 cup whipping cream
Sprinkle pork chops with salt and white pepper. Brown well on both sides in heated butter and oil in frying pan just large enough to hold the chops. Stir in onions after turning chops to brown on second side. Add broth, lemon juice, mustard and dill weed. Bring to boiling. Cover and reduce heat. Simmer until chops are tender, 35 to 40 minutes. Remove chops, but keep them warm. Skim and discard fat from cooking liquid. Add cream. Bring to boiling, stirring. Cook until reduced and slightly thickened. Taste and add salt if needed. Pour sauce over chops.
