Chicken Nuggets
1 (6-oz.) box of stuffing, any flavor
4 egg whites
1-1/2 lbs. boneless, skinless chicken breasts, all fat removed
Preheat oven to 425. Cover a cookie sheet with foil. Spray the foil with nonfat cooking spray. On high speed in a blender or food processor, grind the breadcrumbs and seasoning mix from stuffing for 30 seconds. Pour into a shallow bowl. Beat the egg whites in a blender or food processor for 15 seconds. Pour into a shallow bowl. Cut the chicken into nuggets. With a fork take the pieces of chicken, one at a time, and dip them into the ground crumbs. Dip into the egg whites. Dip again into the crumbs. Place the prepared chicken nuggets on a cookie sheet. Bake for 15 minutes and then turn the nuggets over. Bake for an additional 5 minutes. Serve with mustard, BBQ sauce, sweet and sour sauce or your favorite dressing for dipping.
