Chicken with Carmelized Onions
2 chicken breasts
3-4 TBSP oil
3 TBSP butter or margarine
1/3 to 1/2 large Spanish onion (I used a vidalia onion)...sliced
3 TBSP light brown sugar
Set oven to 300.
Place chicken breasts in pan with med/hot oil (you can use olive oil or regular vegetable oil0. I split them so they cook faster. Cook about 3 minutes on each side, making sure they are done in the middle. Remove from pan and place in an oven proof dish and place in the oven to keep warm.
Drain oil from pan. Place the butter in the pan with heat set at medium. Melt butter then put onions inn the pan. Cook until transparent and starting to crisp up (brown). Sprinkle with brown sugar on the onions and mix well.
Take the chicken out of the oven and place carmelized onions on top of the chicken.
