Lemon Refrigerator Cake
1 lemon cake mix
2 sm. pkgs. lemon jello
1-1/2 cup boiling water
1-1/2 cup lemon-lime soda
1 pkg. instant lemon pudding mix
1-1/2 cup cold milk
1 cup whipping cream, whipped
To make cake: Prepare and bake cake according to direction in 9x13-inch pan.
While cake is baking, dissolve jello in hot water. Gently stir in lemon-lime soda. Chill in refrigerator while cake is baking. While baked cake is still hot, punch holes in cake with fork. Spoon cool gelatin mixture over cake. Refrigerate.
To make frosting: Beat lemon pudding mix with milk until thick. Fold whipped cream into pudding mixture. Spread over top of cake. Chill. Cut into squares to serve. If desired, garnish each portion with thin lemon slices or mint leaf.
