    WARM STEAK AND POTATO SALAD

    1 pound small red skin potatoes
    3 strips bacon
    1 small red onion, chopped
    1 pound boneless beef sirloin, cut into thin strips
    1/4 tsp salt
    5 tbs honey
    5 tbs cider vinegar
    1/2 tsp cornstarch mixed with 1/2 tsp cold water
    6 oz bag baby spinach leaves
    1 cup grape tomatoes, halved

    Place potatoes in saucepan and cover with water. Salt lightly. Bring to a boil. Simmer 20 min. or until tender. In skillet, cook bacon until crisp. Transfer to paper towels.

    Add onion to drippings and cook 3 min. Add steak and salt. Cook 2 min. longer or until steak is no longer pink. Transfer steak and onions to a plate, keep warm. Add honey and vinegar to skillet, cook 2 min.

    Add cornstarch water mixture cook 30 seconds. Remove from heat. Drain potatoes, run under cold water. Cut potatoes into quarters and place in a bowl, along with the crumbled bacon and steak onion mixture. Add spinach, warm honey vinegar mixture and tomatoes. Toss gently. MAKES 4 SERVINGS.
