    GREEK MEATLOAF

    1 1/2 pounds lean ground beef
    1/2 cup unseasoned bread crumbs
    4 oz basil tomato or plain feta cheese, crumbled
    2 eggs, beaten
    1 large onion, chopped
    1 cup shredded carrot
    1 tsp dried Greek seasoning or dried oregano
    1/2 tsp salt
    1/2 tsp pepper

    Heat oven to 375 degrees. Spray a 13X9 inch baking pan with nonstick spray. In a large bowl, mix together the first 9 ingredients. Form into a loaf, place in baking pan.

    Bake 1 hour or until temp registers 150 degrees on thermometer. Allow to rest covered 10 min. before slicing. Goes good with oven fries. MAKES 6 SERVINGS.*
