Here is another great recipe to take to a potluck dinner....It was really good, but I like almost anything that has kidney beans in it!!

Bean and Rice Bake
2 tbsp. vegetable oil
1-1/2 cups chopped onion
1/4 cup chopped green pepper
2 cans (15 1/2 oz. each) red kidney beans, drained
1 cup cooked long grain rice
1 cup creamed cottage cheese
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. chili powder
1/4 cup shredded cheddar cheese
Optional green pepper rings
Preheat oven to 350º F.
Heat oil in a medium skillet.
Sauté onion and chopped green pepper until tender,
about 5 minutes.
Combine beans, rice, and cottage cheese.
Fold in onion, green pepper, salt, pepper,
and chili powder.
Spoon into a lightly greased 2 qt. casserole.
Bake at 350º F. for 35 minutes or until bubbly.
Garnish with shredded cheddar and green pepper rings
