BROCCOLI MASHED POTATOES
MAKES 4 SERVINGS.
Pepper to taste
1 tbsp butter or margarine
1 onion, chopped
2 potatoes, unpeeled, quartered
1/8 tsp salt
2 tbsp nonfat cream cheese
2 1/2 cups broccoli florets
PLACE potatoes in a saucepan, add water to cover, bring to a boil. Reduce heat, cover simmer until tender. In another pot, add broccoli and onion and enough water to cover. Bring to a boil. Reduce heat, cover simmer until tender. Drain potatoes and vegetables. In bowl, mash potatoes leaving skins on until roughly mashed. Blend in cream cheese, butter, salt and pepper to taste.
