These potatoes are great!! What a great way to eat spinach!!

Mashed Spinach Potatoes
Serves 4-6
4 large Potatoes, peeled and cut into large pieces
4 tablespoons Butter
1 1/2 cups Milk
1 cup Spinach, chopped (defrosted)
2 cups Swiss cheese, grated
Cook the potatoes until soft.
Drain.
Add to the bowl of a mixer.
Add the butter.
Gradually add the milk while mixing.
Add the spinach and cheese.
Whip until the cheese melts.
Serve warm.
