Prep Time: 15 Minutes Cook Time: 15 Minutes Ready In: 30 Minutes INGREDIENTS: 1 tablespoon vegetable oil 2 carrots, diced 2 stalks celery, diced 1 small yellow onion, diced 2 cloves garlic, chopped 1/2 pound smoked sausage, sliced 1 (15 ounce) can kidney beans, rinsed and drained 1 (15 ounce) can cannellini beans, rinsed and drained 1 (14.5 ounce) can diced tomatoes, drained 2 bay leaves 1 teaspoon dried thyme 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1 tablespoon chopped fresh parsley (optional) DIRECTIONS: Heat oil in a large skillet over medium-high heat. Add the carrots, celery, onion, and garlic; cook and stir for a few minutes, until the onion is transparent. Add the sausage to the skillet, and cook for a few more minutes to brown.
