Garlic Red Potatoes 2 lb. baby red potatoes 1/4 cup butter or margarine, melted 2 TBSP minced garlic 1 TBSP salt 1 TBSP paprika 1 TBSP. lemon juice 1 TBSP Parmesan cheese Preheat oven to 400. Place potatoes in an 8x8 inch baking dish. In a small bowl, combine melted butter, garlic, salt, paprika, and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes. Cover and bake for 30 minutes. Uncover and bake an additional 10 minutes until golden brown. Recipe source: Aunt Mid's. NOTE: I found that if you use a little bigger red potatoes, you may need to cook a little longer than the 30 minutes. |
