Asparagus Caesar
3 lbs. fresh asparagus spears
1/4 cup plus 2 TBSP butter or margarine, melted
1/4 cup plus 2 TBSP lemon juice
1/4 cup plus 2 TBSP grated Parmesan cheese
paprika
lemon slices (optional)
Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired. Cook asparagus, covered in a small amoount of boiling water for 6 to 8 minutes or until crisp-tender. Drain. Place asparagus in a 12x8x2-inch baking dish. Combine butter and lemon juice; pour over asparagus. Sprinkle cheese and paprika over asparagus. Place under broiler until browned. Garnish asparagus with lemon slices.
